Whilst in lockdown a few months ago, I, like many people ended up doing a fair bit of baking and I actually learnt how to make chocolate mousse – all from the comfort of my own home. I never thought I would even care to make my own chocolate mousse as I’ve always happily just bought it from the shop, however when I saw how easy it was, and with an abundance of time, thought it would be stupid not to give it a go! I will say, I was pleasantly surprised at how nice it turned out, and although it’s not something I’d make often, because I don’t always have the time, it’s nice knowing that it’s something I can easily make or even if I just want an alternative chocolate fix!
INGREDIENTS
120g Chocolate (Milk/Dark)
4 Medium Eggs
2tbs Granulated Sugar (Optional)

CHILLING TIME
2 – 4 Hours
INSTRUCTIONS
1. Separate your eggs – Have a medium sized glass bowl for your egg white and any other bowl for your egg yolk.
2. Melt all of your chocolate – either the old fashioned way, over boiling water or in the microwave for 30 seconds and repeat until your chocolate is melted. NOTE: When melting your chocolate over boiling water, make sure you use a metal spoon to mix it and ensure that no water or moisture gets into the chocolate. If you’re melting your chocolate in the microwave, you must check it regularly so that it doesn’t seize (burn) otherwise you’ll have to throw it away and start again.
3. Moving onto your egg whites, use a handheld whisk to whisk your egg white until it’s light and fluffy with peaks – It should look like white foam and be relatively stiff. NOTE: If you decide to add granulated sugar, add it at this stage and then continue to whisk your egg whites.
4. Once your chocolate is melted, whisk your egg yolk quickly into the melted chocolate.
5. With your whisked egg whites, add one-third into your bowl containing your mixture of melted chocolate and egg yolk. Mix with this with a spatula until everything is all mixed together.
6. Add the rest of your egg whites to your mixture, but use your spatula to gently fold the mixture into itself until all of the ingredients are completely mixed together. NOTE: It’s important not to abrasively mix your egg whites into the mixture to retain as much air as possible for your chocolate mousse.
7. Spoon your mixture into any jar or container of your liking and place in the fridge for 2 – 4 hours until set.
9. Once set, take out of the fridge and enjoy!
