I’ve always enjoyed baking, ever since I was little, however it usually just stemmed from getting one of those cake mixes that you just adds eggs, oil and water to. Even when I got older my baking (from scratch) was far from adequate and even when I followed recipes, they never turned out good, so I continued to stick to my packet cake mixes! However, during my first year of university, when I was living in student halls, one of my flat mates actually taught me how to make a basic sponge cake. Some may call it a Victoria sponge (if you were to actually add the jam and cream), but I call it ‘The University Cake’ because that’s where I learnt how to make it! This recipe is one that I use anytime I want to bake a simple cake from scratch and it’s one of those fail-safe recipes that work every single time! I’m telling you, if I can make it, anyone can!
THE UNIVERSITY CAKE
INGREDIENTS
3 Eggs
6oz Caster Sugar
6oz Self Raising Flour
6oz Butter
1tsp Milk
PREPARATION TIME
15 minutes
COOKING TIME
20 – 40 minutes
INSTRUCTIONS
1. Preheat the oven to 160C/350F/Gas mark 4.
2. Grease and line one 20x20cm/8in baking tin. To do this, apply butter to every side and base of the tine and then follow this by applying baking paper to line all the sides of the tin.
3. Beat together, the eggs, caster sugar, self-raising flour, butter and milk in a large bowl until smooth.
4. Put all of the mixture into the baking tin and put it in the oven for 20-40 minutes.
5. Once the cake it cooked through, let it cool down on a cooling rack.
6. Enjoy! You can make your own icing, but uni students are on a budget and it’s lovely as it is with a hot chocolate or cup of tea!
